New comfort food and cocktail bar place to open in downtown C'dA

COEUR D’ALENE, Idaho – A sweet twist on a historic space is making its way to downtown Coeur d’Alene.

Chef Adam Hegsted and Eat Good Group will revamp the building on 317 Sherman Ave. that previously housed The Cellar Restaurant into Honey Co.

The Cellar closed in late January but Hegsted remained interested in re-purposing the space.

Honey Co. will feature all-day dining upstairs, with “modernized comfort foods” with “unique but very recognizable flavors,” Hegsted said. He wants the restaurant to echo Midwestern themes with an Inland Northwest twist.

It is set to open in late May.

“It’s one place you can go downtown to get a meal any time,” he added.

Paul Dorazi, general manager with Eat Good Group, said the restaurant is named after Hegsted’s favorite ingredient, and plays into the concept of using local and sustainable products.

The space will also feature a social club downstairs, which will essentially function as a cocktail bar with a tapas-style menu, and whiskeys, Scotch, craft cocktails and beers, and local wines.

“We are thinking more of the speakeasy vibe where you can come down the stairs away from the hustle of downtown and have an amazing craft cocktail, craft beer or local wine with friends and family in a quieter, comfortable atmosphere,” Dorazi said.

Catering and live music events will also utilize the downstairs space, and a partnership with the Bing Crosby Theater in downtown Spokane will bring in smaller touring acts, Hegsted said.

Hegsted began his journey in the space that Honey Co. will call home when he began working at Brix Restaurant in 2003. He worked there for four years before returning later to run The Cellar.

“Beginning to transform it [the space] into something that we really want is incredible,” he said.

The restaurant's floors and walls are receiving makeovers before the opening date.

According to his Facebook page, Hegsted is involved in numerous restaurants throughout the Inland Northwest, including the Gilded Unicorn, Le Catering Co., Yards Bruncheon and the Wandering Table, to name a few.
